Pain De Campagne. Pain de campagne is known in English as country bread. Evening, First Day: Mix the dough.
Saucisse sèche ou saucisson de campagne. I always also add in some rye flour to enhance the flavour of the loaf. Traditionally, it is made with a starter wherein the dough ferments for several hours resulting to more developed yeasty taste.
Mix in enough bread flour to form shaggy mass that can be. worked with hands.
In a large bowl, mix the active starter with the water to dissolve it.
Dust the top of the mixture with the salt and yeast. Sprinkle the yeast over the dough and mix with a plastic scraper. It was even nice enough for a pic outside!, crumb pic to follow cheers, Steve.
