Omelette Chorizo
Omelette Chorizo. When warm, pour in egg-chorizo mixture and cook eggs. Crack the eggs into a small mixing bowl and beat the eggs with a whisk or fork.
Then add quartered pieces of chorizo. Add the butter and a dash of oil and let it melt and bubble, that will tell you that it is hot enough. Slice the mozzarella and place over one half the omelet.
Then add quartered pieces of chorizo.
When soft add the peppers, chillies and garlic.
The chorizo will start to sizzle, releasing all its tasty oils and spices. Pour in the eggs and stir to distribute the ingredients. Add lime juice and stir in cilantro right before serving.
