Muffin Chorizo. Spray a muffin pan generously with cooking spray. Add shredded pepper Jack cheese and cilantro to egg mixture.
Once the chorizo muffins are done baking, I have a quick tip to share: If you don't have a cooling rack, simply pop the muffins part way out of the pan.
Add the chorizo and goats cheese to the flour mixture, stir to distribute - dry mixture.
