Contact Ile Flottane, or known as Floating Island (in English), is a classic French dessert that consists of meringue floating on a sea of vanilla custard, also known as crème anglaise in French. Beat egg whites, cream of tartar, and salt with a mixer on medium speed until soft peaks form.

Chill the creme anglaise until ready to serve.
How to make floating island dessert. The meringue is prepared from whipped egg whites, sugar, and vanilla extract and baked in a bain-marie. It is charming and cozy, with somewhat bizarre artwork (x-rays of monkeys?).
