Sauce Mayonnaise. Place light olive oil, egg, lemon juice, Dijon mustard, salt, and pepper together in a bowl. Slowly, a few drops at a time, pour the oil into the bowl while whisking constantly.
While it's running, add the remaining oil in a steady stream. In a glass bowl, whisk together egg yolk and dry ingredients. Once you try this spicy mayo I promise there's no going back to good old mayonnaise.
The two versions are simple: Hollandaise is a white emulsion and mayo is a yellow or olive oil emulsion.
Like the name indicates, the Srirachannaise is a mixture of Sriracha sauce and mayonnaise.
